Ice Cream with Everything

ice-cream-In July you can ice cream with everything at Buckhorn Inn.  In 1984, President Ronald Reagan proclaimed July as national ice cream month. Chef Robert Neisler celebrates each year by offering up some decadent ice cream desserts like Strawberry Smoothie Ice Cream Pie, Triple Chocolate Ice Cream Sandwich, Old-Fashioned Mud Pie, Mint Chocolate Grasshopper Pie, Peach Melba Ice Cream Pie and Peanut Butter ‘n Chocolate Treat, Turtle Ice Cream Pie with Caramel, Chocolate and Pecans.

Check out our weekly menus to see when your favorite ice cream dessert will be served.  In honor of the celebration, we are sharing a recipe for Strawberry Smoothie Ice Cream Pie (see below).  But–it tastes so much better if we make it for you. 

 

 

Yield:  10-12 servings

Ingredients

1 (7-ounce) package waffle cones, broken into pieces

6 tablespoons butter, melted

1 tablespoon granulated sugar

2 (1-quart) containers premium vanilla ice cream, divided

1 (16-ounce) container fresh strawberries (1 quart), stemmed

1/4 cup powdered sugar, divided

1 pint fresh blueberries

2 ripe bananas

Garnishes:  waffle cone pieces, fresh whole strawberries, fresh blueberries 

Preparation  Process first 3 ingredients in a food processor until finely crushed. Firmly press mixture onto bottom of a lightly greased 10-inch springform pan.  Bake at 350° for 10 minutes. Cool completely in pan on a wire rack. Let vanilla ice cream stand at room temperature 20 minutes or until slightly softened.  Process strawberries and 2 tablespoons powdered sugar in a food processor until pureed, stopping to scrape down sides; remove strawberry mixture, and set aside.  Process blueberries and 1 tablespoon powdered sugar in food processor until pureed, stopping to scrape down sides; set aside.  Mash bananas with a fork in a large bowl; stir in remaining 1 tablespoon powdered sugar. Set aside.  Place 1 quart of ice cream in a large bowl; cut into large (3-inch) pieces. Fold strawberry mixture into ice cream until blended. Place in freezer until slightly firm.

Divide remaining quart of ice cream in half, placing halves in separate bowls. Stir blueberry mixture into half and mashed banana mixture into remaining half. Place bowls in freezer. Spread half of strawberry mixture evenly into prepared crust in springform pan. Place pan and remaining strawberry mixture in freezer. Freeze 30 minutes or until strawberry layer in pan is slightly firm. Spread banana mixture evenly over strawberry layer in pan; return pan to freezer, and freeze 30 minutes or until banana layer is slightly firm. Repeat procedure with blueberry mixture. Spread remaining strawberry mixture over blueberry layer in pan, and freeze 3 hours or until all layers are firm.  Let pie stand at room temperature 15 minutes before serving. Garnish, if desired.

Fantastic peaceful stay–Trip Advisor Review

Spent 2 nights in the Tower Room and what a great space it was for a relaxing time on our touring holiday. A beautiful part of the country and the Buckhorn Inn is set in gorgeous grounds offering peace and quiet.  The Tower room is different and compact although on 3 floors and it felt like we were staying in our very own treehouse. It was very clean and comfortable.

The breakfasts were delicious and the staff very attentive. Mr John was a lovely host and spoke to everyone each morning.
Would thoroughly recommend for anyone going to the Smoky Mountain area

The breakfast and dinners here are a real treat. We always look forward to the light biscuit and sweet cake or roll in the breadbasket to start breakfast and the homemade breads at dinner. Why eat anywhere else? We have stayed in the main house in the past but opted for a one bedroom cottage this time. It had a good sized bedroom plus living room dining area with a kitchenette that was equipped with a refrigerator and microwave. The inn sits on a large property containing several two and three bedroom rentals plus seven one bedroom cottages. We always enjoy hiking the property through the various gardens. The owners are very gracious and always come around to talk to you during breakfast. We look forward to returning soon.

This was our first visit to Buckhorn Inn and, WOW – we can’t wait to go again! The main inn is beautifully maintained and has loads of charm. The breakfast we had each morning was fabulous and not to be missed! We did not have a chance to try the dinner on this trip but the menu looked so good! We stayed in Bebb House and we were completely charmed by it! It is separate from the main inn and quite private with an incredible view. The furnishings and art in Bebb House are so very perfect for it and we felt right at home. The beds were incredibly comfortable and the house was squeaky clean! The kitchen, while not updated, had everything we needed. We could have sat and enjoyed the view from the covered porch at Bebb forever! This is a perfect place to unwind! The grounds of the Buckhorn offer so much. There is a lovely trail and we had the opportunity to take a birding expedition that was very enjoyable. Staff in the office, wait staff and the cleaning staff were all so great! Tried to book again for October, but it was already full. Will definitely be back to Buckhorn and enjoy the charm and personality of this jewel.

Wonderful Experience – Review of Buckhorn Inn, Gatlinburg, TN – TripAdvisor

“Relaxation at its best!”  We celebrated our 28th anniversary at Buckhorn Inn and everything from start to finish was excellent. We made reservations for dinner at the inn every night and the food and the service was wonderful. We were served a full breakfast each morning and it was included in the price of our stay. The inn was so comfortable that you felt at home without the responsibilities of home. The grounds of the inn were immaculate with many things blooming including the rhododendrons. We had a wonderful time. This was not our first time to visit and it will definitely not be our last.
