Lemon Bar Cookies are Perfect for Spring
The very best lemon bars have a rich bottom crust and a creamy, tart layer. These delicious cookies fulfill both requirements! The bright, sunny flavor makes them a treat for all ages and you can whip them up in a jiffy. This recipe makes 36 bar cookies. You might also want to try making them with lime juice, rather than lemon, for a citrusy change.
1 cup butter, softened
2 cups white sugar
2 ¼ cups all-purpose flour
4 eggs
2 large lemons, juiced
Preheat oven to 350 degrees F. Blend together softened butter, 2 cups flour, and ½ cup sugar. Press dough into the bottom of an ungreased 9 x 13” pan. Bake for 15 minutes until firm and golden. Meanwhile, whisk together 1 ½ cups sugar and ¼ cup flour. Whisk in eggs and lemon juice. Pour over the baked crust. Bake an additional 20 minutes. The bars will firm up as they cool. Sprinkle with powdered sugar and cut.
